In bread processing aspect, the use of laccase can increase the bread volume, improve the bread structure and softness, while improve the mechanical strength and stability of dough during processing, and can reduce viscosity. The laccase can remove phenolic compounds remained during the production and storage period of beers, wines, fruit and vegetable juices, thus to avoid the secondary turbidity caused by the polymerization of phenolic compounds and proteins.
